Cinnamon PB&J French Toast

Ingredients

  • 4 - 5 Eggs
  • 1 – 1¼ Cup of Milk
  • Butter
  • Salt to Taste
  • Blueberry Compote
  • Peanut Butter

Nothing beats a classic Peanut Butter and Jelly… until now, that is. Upscale your childhood favorite into this French toast recipe for a breakfast that combines comforting nostalgia with bold flavors.

Recipe

  1. Start by cutting your brioche loaf into even slices.

  2. Make a quick batter by whisking your eggs, milk, and salt together.  Each slice of brioche gets soaked in the batter until thoroughly coated.

  3. Set your stovetop to medium-high heat and grease a pan with enough butter to coat it.  Once it's heated, cook your French toast for 3-4 minutes per side, or until cooked to your preferred doneness.

  4. If you don’t have blueberry compote, you can multitask and cook down blueberries and sugar in a pot.

  5. Once your French toast is ready, let the slices cool for 1-2 minutes before for plating.

Plating

  1. Take a small bowl or ramekin filled with peanut butter and place it in the microwave until melted.

  2. Stack 2-3 French toast slices, optionally spreading a bit of peanut butter between each slice.

  3. Top your French toast stack with peanut butter and a generous helping of your blueberry compote.

  4. Optionally, drizzle a bit of the liquid from your compote around the base of the plate.
